Spite

It helps our stress levels and blood pressure if we don't habitually assume the worst motives in other people's actions.

Here's a more likely scenario:

[thinks] "Wow, that was a good game, let's have another against this opponent."

[voice from elsewhere the room] "Hey, you're not starting another game are you? I'm about to serve up the meal!"
Picture this: a grandmaster extends a hand in the digital realm, saying, "Shall we dance again?" Only to yank it back faster than a cat retracting its paw from a surprise touch. It's the waltz of mixed emotions, leaving opponents bewildered and kings scratching their heads.

Is it the new spite meta in the great chess opera? Or is it merely the fickle finger of fate, playing pranks on the unsuspecting players of the board? Only time will tell.

Well, looks like the train passed by, and you missed it like a ninja in tap shoes. No worries, though! If you didn't catch that last quip, don't fret – in life sometimes it's like trying to juggle flaming marshmallows while riding a unicycle on a tightrope.
People sometimes misclick the analysis button right after a game. Cell phones, fat fingers.

Never attribute to malice...
many times I've accidentally clicked rematch after smashing the resign button. I think it's tap to click on my touch pad and the rematch button suddenly appearing while I'm moving the cursor.

Why so many similies?
Yes it's a glitch on some hardware accidentally offering rematch , happened many times to me on my old tablet
I have also pressed this button many times by mistake - perhaps something to think about improving - although it's a very minor issue.
